What to expect?

A real explosion of flavour! Join our unique cooking class in Bologna and prepare the 'sfoglia' (rolled dough) like a real 'zdaura' - a Bolognese word for the 'queen of the house'.

The tour starts in the morning with a walk to the most famous food markets in the city centre, the Quadrilatero and the Mercato delle Erbe, where some Bolognese still buy their groceries today. Located behind Piazza Maggiore, the Quadrilatero is Bologna's oldest market: it dates back to medieval times, when the area was completely dedicated to trade and craft activities. Strolling by the food booths and the fresh pasta shops, you will learn the history of this lively and fascinating place.

After a stop at the elegant Mercato delle Erbe, which now houses a number of bars and restaurants, we will take you straight to the home of a local cook to prepare the typical fresh pasta of Bologna such as tagliatelle and tortellini.

Here you will discover all the secrets of traditional recipes, and learn how to roll out the dough. Once you have finished cooking, we will taste together the specialties that have made Bologna famous all over the world!
